| Vinification | Selection of the best hand-picked grapes. Cold maceration followed by fermentation: 50% in stainless steel vats, 50% in ovoid concrete vats. Post-fermentation maceration for 20 days to round out the tannins and concentrate the fruit. 30% matured in oak barrels for 6 months and 70% in stainless steel stainless steel vats. |
